From the Earth

Eating well is what's "in the news" these days.  Eating well didn't happen for me until my health went awry.  I gave up my 3 best friends:  bread, sugar and chocolate.  (Who does that willingly?)  Giving it up brought hopes that my health would return.  

Three years later, I am gluten-free (by choice), I eat minimal amounts of sugar (only the more preferred kinds:  honey, maple syrup, coconut sugar and pure cane sugar) and for chocolate, I stick to the dairy-free kind.

Vegetables have now become a choice I gladly make.  Fresh from the garden varieties are always the best.  I grew up on canned veggies and had no idea that fresh grated beets on a salad could be so good!
